Ingredients
- 500 g (17 oz) gnocchi (store-bought or homemade)
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 400 g (14 oz) canned crushed tomatoes
- 2 tbsp tomato paste
- 1 tsp dried oregano
- ½ tsp chili flakes (optional, for a spicy kick)
- Salt and pepper to taste
- 100 g (3.5 oz) mozzarella, diced or shredded
- Fresh basil leaves for garnish
- Grated parmesan for serving
Instructions
Heat the olive oil in a large skillet over medium heat. Add the gnocchi and pan-fry for 3-4 minutes, stirring occasionally, until golden and slightly crispy on the outside. Remove the gnocchi from the skillet and set aside.
In the same skillet, add a little more olive oil if needed and sauté the chopped onion until soft and translucent, about 3 minutes. Add the minced garlic and cook for another minute until fragrant.
Stir in the tomato paste, cooking for a minute to deepen the flavor. Pour in the crushed tomatoes, then add oregano, chili flakes (if using), salt, and pepper. Let the sauce simmer gently for 5 minutes, stirring occasionally.
Return the gnocchi to the skillet, tossing to coat them evenly in the tomato sauce. Scatter the mozzarella over the top and cover the pan, allowing the cheese to melt for 2-3 minutes.
