Ingredients
For the Donuts:
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 3/4 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 large egg
- 1/2 cup milk (dairy or non-dairy)
- 1/4 cup vegetable oil or melted butter
- 1 teaspoon vanilla extract
- 1/2 cup boiling water
For the Chocolate Glaze:
- 1/2 cup semisweet chocolate chips
- 2 tablespoons unsalted butter
- 1 tablespoon milk
- 1 teaspoon vanilla extract
- 1/2 cup powdered sugar
Instructions
Preheat your oven to 350°F (175°C). Grease a donut pan with non-stick spray or lightly butter the wells.
In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt until combined.
Add the egg, milk, vegetable oil (or melted butter), and vanilla extract to the dry ingredients. Stir until the mixture is smooth and well combined.
Pour in the boiling water and mix until the batter is smooth. The batter will be thin, but that’s okay; it’ll result in a light and fluffy donut.
Spoon the batter into the donut pan, filling each well about 3/4 full. You can also use a piping bag for a cleaner fill.
Bake the donuts for 12-15 minutes or until a toothpick inserted into the center comes out clean. Allow the donuts to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
While the donuts are cooling, make the glaze. In a small saucepan over low heat, melt the chocolate chips and butter together. Stir in the milk and vanilla extract until the mixture is smooth. Remove from heat and whisk in the powdered sugar until smooth and glossy.
Dip each donut into the chocolate glaze, coating the top evenly. Let the excess glaze drip off before placing the donuts back on the wire rack to set. You can drizzle extra glaze over the top or sprinkle with chocolate shavings or sprinkles if you like.
